Creamy Thai Pork and Vegetable Soup
What you’ll need:
* Leftover Pork Sirloin Roast: 1-1.5 cups, cut into bite-sized cubes or strips.

* Shallots/Red Onion: 1/4 cup total, thinly sliced.
* Broth: 4 cups Chicken or Vegetable Broth (low sodium).

* Aromatics:
* 2 Tbsp Oil
* 4 cloves Garlic, minced
* 1 Tbsp fresh Ginger, minced (substitute 1/2 tsp ginger powder if needed)
* Seasoning:
* 4 Tbsp Fish Sauce
* 1 Tbsp Brown Sugar or Palm Sugar
* Pinch dried chili crush or Chili Garlic Sauce (adjust to your spice preference)
* Finish/Garnish:
* Juice of 1 Lime (about 2 Tbsp)
* 1/2 cup Cilantro, roughly chopped.
Let’s make it:
* Saut Aromatics: In a large pot or Dutch oven, heat the oil over medium heat. Add the minced garlic, minced ginger, and sliced shallots/red onion. Saut for 2-3 minutes until fragrant and softened.
* Build the Broth: Pour in the chicken/vegetable broth and the full can of coconut milk. Stir well.
* Season the Base: Add the fish sauce, sugar, and red pepper flakes. Bring the soup to a gentle simmer. Reduce the heat and let it simmer for 10 minutes to allow the flavors to meld beautifully. Do not boil aggressively.
* Add Harder Vegetables: Add the sliced carrots. Simmer for another 3-5 minutes, until the carrots are crisp-tender.
* Add Pork and Spinach: Add the sliced leftover pork sirloin (which just needs to be warmed) and the spinach. Stir gently. Cook for just 1-2 minutes until the spinach is wilted and the pork is heated through.
* Finish and Balance: Remove the pot from the heat. Stir in the fresh lime juice. Taste the soup. You are looking for a complex balance:
* Needs salt? Add a splash more fish sauce.
* Needs sourness? Add a splash more lime juice.
* Needs sweetness/balance? Add a pinch more sugar.
* Serve: Ladle the hot soup into bowls. Garnish generously with fresh cilantro before serving.
