Ingredients:
2 medium low-carb tortillas (I used La Banderita)
1/3 cup (80g) refried beans
2 oz (56g) extra lean ground beef
seasonings: 1/2 tsp (1.5g) onion powder, garlic powder, paprika, cumin, and salt and pepper, to taste
2 tbsp (30g) enchilada sauce
1/2 cup (56g) fat-free cheese
Mini tomatoes, black olives and green onion for topping (optional)
Cooking Directions:
Preheat air fryer or oven to 375F.
Microwave or air fry each tortilla for 1 1/2 min so they harden (take them out halfway and flatten them)
Cook ground beef.
Spread beans on one tortilla and add beef.
Place other tortilla on top, then spread enchilada sauce.
Add cheese and air fry for ~4 min or until cheese melts.
Add toppings.
Important Cooking Notes:
Hardening tortillas will keep their shape and prevent them from getting soggy right away.
Customize toppings you like.
Rinse and dry cheese to get rid of coating and have a super melty finish.
