Arachuvitta Sambar
Ingredients
To Cook The Dal
Toor Dal - 1 Cup (Soaked 30 Mins)
Onion - 2 Nos Chopped
Tomato - 3 Nos Chopped
Turmeric Powder - 1 Tsp
Salt - 1 Tsp
Asafoetida Powder - 1/4 Tsp
Water
To Make The Masala Paste
Chana Dal - 1 Tbsp
Urad Dal - 1 Tbsp
Coriander Seeds - 2 Tbsp
Red Chilli - 12 Nos
Grated Coconut - 1/2 Cup
Asafoetida Powder - 1/4 Tsp
Water
To Make Sambar
Ghee - 3 Tbsp
Urad Dal - 1 Tsp
Mustard Seeds - 1 Tsp
Cumin Seeds - 1 Tsp
Red Chilli - 2 Nos
Shallots - 300 Gms
Drumstick - 1 No.
Thick Tamarind Puree - 1/2 Cup
Water - 1 1/2 Cups
Salt - 1 Tsp
Curry Leaves
Jaggery - 2 Tsp
Chopped Coriander Leaves
METHOD:
1. Take soaked dal, chopped onions, tomatoes, turmeric powder, salt and hing in a pressure cooker.
2. Pour enough water, mix well and pressure cook the dal for 5 whistles on a medium flame. Keep it aside.
3. For the masala paste, take chana dal, urad dal and coriander seeds in a pan.Roast for 2-3 mins.
4. Then add red chillies and roast until they are dark in color.
5. Add grated coconut and roast until it is no more raw.
6. Once done, add asafoetida powder and mix well. Turn off the stove and cool the ingredients.
7. Once the ingredients are fully cooled down, transfer them to a mixer jar and grind into a fine powder.
8. Add a little water and grind into the fine paste. Keep it aside.
9. For the sambar, take ghee in a pan. Add urad dal, mustard seeds and cum,in seeds. Saute.
10. Once the mustard seeds start splattering, add red chillies, shallots and drumsticks. Saute for 5 mins.
11. Add ground masala paste and some water. Add tamarind puree and mix well.
12. Transfer the cooked dal mixture and little more water to the kadai and mix well. Check for seasoning and add salt if required.
13. Add some fresh curry leaves, cover the kadai with a lid and cook for 10 minutes on a medium flame.
14. After 10 mins, add jaggery and mix. Finally garnish with chopped coriander leaves.
15. Yummy Arachutvitta Sambar is ready to be served hot and nice with rice or any tiffins of your choice.
To Make Potato Masala
Potato - 1/2 Kg
Oil - 3 Tbsp
Chana Dal - 1 Tsp
Urad Dal - 1 Tsp
Mustard Seeds - 1 Tsp
Cumin Seeds - 1 Tsp
Red Chilli - 3 Nos
Hing / Asafoetida - 1/2 Tsp
Onion - 2 Nos
Curry Leaves
Green Chilli - 4 Nos
Ginger Garlic Paste - 1 Tsp
Tomato - 2 Nos
Salt - 1 1/2 Tsp
Turmeric Powder - 1/2 Tsp
Red Chilli Powdr - 1 Tsp
Coriander Powder - 1 Tsp
Water - 1/2 Cup
Garam Masala - 1/2 Tsp
Coriander Leaves
METHOD:
1. Take a wide pan and add oil.
2. Once the oil is hot, add chana dal, urad dal, mustard seeds and cumin seeds.
3. After the mustard seeds start splattering, add roughly cut up red chillies, hing and finely chopped onions.
4. Add curry leaves and mix. Saute until the onions are golden brown in color.
5. Add slit green chillies, freshly pounded ginger garlic paste and saute for about 1 minute.
6. Then add the chopped tomatoes. Add salt, turmeric powder, red chilli powder and coriander powder.
7. Mix well until the oil separates. Pour water, mix well, cover the pan with a lid and cook the masala base for 5 mins on medium flame.
8. After 5 mins, add the cooked potatoes and mix well with the masala base. Make sure it coats every potato piece
9. Add garam masala and mix well. Check for seasoning and add salt/red chilli powder if required.
10. Finally garnish the curry with finely chopped coriander leaves.
11. Tamil Wedding Style Potato Masala is ready to be served hot and nice with rice/phulka.
