EASY GLUTEN FREE BREAD RECIPE

INGREDIENTS
1 sprig Rosemary, leaves only (optional)
100g raw Almonds
150g Buckwheat groats
100g Sunflower Seeds
375g Water
2 tsp dried instant yeast
80g Olive Oil
3 Eggs
1 tsp Salt
160g mixed seeds, plus extra for sprinkling on top (see notes)
HOW TO MAKE IT:
* Preheat oven to 190 degrees Celsius fan forced and grease/line a 1.5L Bread loaf tin.
* Add the Rosemary, Almonds, Buckwheat and Sunflower Seeds into the mixing bowl. MILL / 20 SEC / SP 9. Set aside in a small bowl. Do not wash the mixing bowl.
* Add water and yeast into the mixing bowl. HEAT / 3 MIN /37 DEG / SP 0.5
* Add reserved milled ingredients and all remaining ingredients (except for the extra seeds for sprinkling on top) KNEAD / 1 MIN.
* Scrape down sides and bottom of bowl and then repeat KNEAD / 1 MIN.
* Pour into the Loaf tin lined with baking paper, sprinkle with seeds of choice on top and BAKE for 40-50 mins or until a skewer comes out clean.
NOTES:
FREE FROM: Gluten, Dairy, Wheat, Grain, Sugar and Additives.
To make up the 160g of mixed seeds I used: 40g Pepitas, 40g Sunflower Seeds, 20g linseed/flaxseed, 20g Chia seeds, 20g Sesame seeds and 20g Poppy seeds. You can use a combination of anything you have on hand.
Allow to cool completely before slicing and storing.
Keep in the fridge for up to a few days or it also freezes well.
