For the Gnocchi
1 C einkorn flour, spelt or any other wheat blend
1 Tbsp olive oil
Salt
1 small potato (I used a purple sweet potato) boiled and blended until smooth
Mix in a bowl until combined, and put aside with a towel over it to set
For the pesto
1 C basil (1 big handful)
2 heaping handfuls (approx 5 oz) of spinach or spinach & kale mix
1/2 C walnuts
1/2 C High Quality Olive Oil
2 Tbsp Lemon Juice
2 cloves of garlic
2 tbsp nutritional yeast
Salt & Pepper to Taste
Pulse until a coarse blend is formed
Roast vegetables of choice
@ 375F-400F & cook to your preference - I roasted cherry tomatoes, red onion, zucchini & bell pepper
