1. 10 oz pasta - I used Vesuvio Organic Italian Pasta di Gragnano
2. 2 tablespoons olive oil
3. 1/2 onion diced
4. 5 garlic cloves minced
5. 3 tablespoons tomato paste
6. 1 teaspoon salt , garlic powder, oregano, parsley, chili flakes, paprika (adjust salt to your taste )
7. 1 3/4 cup heavy whipping cream
8. 1 tablespoon butter - optional
9. 1/4 cup pasta water
10. 1/4 cup Parmesan cheese shredded
11. Garnish with parsley and chili flakes
1. Dice onions and mince garlic.
2. Cook your pasta in salt water according to package. Do not over cook. Reserve 1/2 cup pasta water.
3. In a large pan, on medium low heat. Saut onion and garlic in 2 tablespoons of olive oil for 30 seconds. Stir.
4. Add in tomato paste and cook 20-30 seconds stirring.
5. Add in seasoning. Mix and add in heavy whipping cream while stirring to create a silky sauce.
6. As it bubbles on low heat. Add in a pat of butter . Cook 30 seconds stirring.
7. Add in cooked pasta , a bit of pasta water IF sauce is thick.
8. Sprinkle Parmesan cheese and mix.
9. Garnish with fresh parsley and chili flakes if desired.
10. Serve hot perfect with garlic bread and a salad.
