Known as 'Paccheri allo Scoglio' in Italian, this pescatarian pasta recipe features several mollusks that live 'on the rock' (allo scoglio) such as clams, mussels and shrimp! If you can't find paccheri, feel free to use penne or rigatoni pasta.
INGREDIENTS (SERVES: 4-5)
Cherry Tomatoes - 400 grams
Tomato Paste - heaping tablespoon
Black Pepper - to taste
Salt - coarse and fine
Garlic Cloves - 4 cloves
Olive Oil (extra virgin)
Italian Flatleaf Parsley - 1 bunch, minced
Chili Pepper - 1 fresh
Chili Powder - to taste
Paccheri Pasta (or penne or rigatoni) - 320 grams
Mussels - 1 kg
Clams - 1.5 kg
Scampi or Large Shrimp - 7-8 (in shells or just the tails)
Calamari (Squid) - 800 grams
